Sunday Night Dinner – Creamy Asparagus Soup and Tomato Grilled Cheese


I’m taking advantage of the last few cold days we have and making creamy asparagus soup for dinner.  For Mother’s Day my boys got me a Vitamix, something I have really wanted for quite some time.  As a chef it is an invaluable tool in the kitchen.  It arrived Thursday afternoon and I must admit I have used it at least twice a day since.  It’s been a lot of fun playing with the power in this one machine.   If you are serious in the kitchen you may want to consider this machine, although it is quite an investment, even the basic models they offer.  Yeah, I sound like a vitamix ad!  Long story short, this machine is what inspired tonight’s meal.  The vitamix makes hot soup for you!  So great.

On our show day I mentioned that I roasted up my two bunches of asparagus for use later in the week, so it was ready to go tonight. It went straight from the fridge into the vitamix.

I added 1 1/2 cups of homemade chicken stock I had taken out of the freezer earlier in the day to thaw.  I put it on the hot soup setting and boom, done.  This can also be done in a regular blender as well, just blend until very smooth and creamy with no chunks at all.  I then added 1/2 cup of half and half, but you could also use cream or whole milk if you prefer.  This gives the soup is velvety texture. Just blend that for another 30 seconds to incorporate it.  I decided to fancy it up and I mixed some plain yogurt (which I often substitute for sour cream) with some crushed Rosemary to swirl onto the top of the soup.

While I was putting together the soup Alex and Jessica were working on the grilled cheeses.  We used a roasted garlic bread with about 5 types of cheese.  We topped it off with some freshly sliced tomatoes from the share and they were the perfect dippers for the creamy asparagus soup.

To to end the meal we have some gluten free chocolate crinkle cookies.  This was a hit with the boys, although dessert usually is with kids!

So another weekend comes to a close, ending with great times together.  I must admit I am finishing up this post and my plan is to have a cup of tea and another of those crinkle cookies!  I think it’s off to bed early for me tonight.  Hope you all had a great weekend.  Enjoy!
