Chicken, Bacon, Squash “pie”


I really love the show The Great British Baking Show on PBS.  It’s one of my favorites, and I must admit I watch cooking shows all the time.  I was watching this past Sunday night and it was pie night on the show.  One contestant made a chicken, bacon, and butternut squash pie.  So, my meal tonight is very roughly based on my experience watching Sunday night.  I made my “pie” with what I had around the house and in the share.  Here is a link to her pie, she used an incredible spice mixture in hers but I should mention that the contestants have 4 hours to bake their pies….mine is much less detailed but if you feel so inclined to give hers a try….go for it!  Let me know how it turns out.

Here is my humble version which I am very roughly basing on her beautiful piece of baking art.

I didn’t use butternut (we haven’t gotten those yet), I used a delicata squash.  image

I halfed the squash and removed the seeds.  I then peeled it and cut it into slices.

I cubed it into bite sized pieces and started cooking them with a little olive oil over medium heat.

To that went a large chicken breast, cubed, as well as three slices of bacon sliced into thin strips.

I let that cook for a while, rendering the fat out of the bacon and draining when needed.  I made sure the chicken was cooked though and the squash was fork tender.

To this I added salt, pepper, cumin, paprika, cinnamon, and a handful of raisins.

After another 3-4 minutes of cooking I added about a cup of corn to the mix for color and texture.

Instead of using a pie crust for mine I used puff pastry.  I thawed a package from the store and opened it up on a sheet of sprayed tin foil on a sheet tray.  Pile the filling on the pastry and top it with a second sheet of pastry (there are two in a box).  Brush that with a egg wash for color while baking.  I did not seal the edges at all, simply placed the other layer of pastry on top.  About 30 minutes in the oven I had a tasty and pretty dish.  Thanks PBS!
