The “Show” Springdell Winter CSA Pickup #11


Hi everyone, Jess here to bring you the last pickup of the Winter CSA, and how apropos that it’s supposed to snow!  Hopefully by the time the Spring CSA begins, so will more of the spring weather!  

What a great way to end the season!  

While at the farm today, I noticed a sign that caught my eye. Springdell is hosting an annual Earth Day project for the kids in April. The sign at the stand requests that we save paper cartons, bring them to the stand, cleaned out with a good rinse. The plan is they’ll be cut in half and used as a pot on Earth day, so remember to hold onto those paper cartons!

I took a moment to bring my coffee mug over to Tim’s Muddy Water coffee truck for some decaf. It was so nice to walk the farm grounds with a warm mug in my hands.  

Next, I stopped by Dan’s truck and grabbed some fresh Jordan Brother’s Seafood, scallops and salmon.  I love the one stop-shopping!

The scallops were great wrapped in Springdell bacon. I partially cooked the bacon before wrapping it around the scallops, which made for a crispy crust (which I prefer to soggy bacon). I accidentally broiled the scallops just a little too long (4 minutes per side), charring the edges of the bacon, but other than that they were pretty great!  I’m hanging on to the rendered bacon fat, you never know when it’ll come in handy!

I roasted up some parsnips while cooking the bacon, making for a tasty side. A couple of the sweet potatoes and russets were quick microwaved and sliced with butter.  This is my go-to when the oven is preoccupied.  

I’m thinking the Tower Root Beer would be fabulous with a big ‘ole scoop of Tully vanilla ice cream… We’ll see what dessert time brings.
