The “Show” – Springdell Summer CSA Pickup #2


Hi everyone, Jess here with the second Summer CSA pickup of the season! The summer weather is in full swing, the fields are producing some beautiful produce and I couldn’t be happier!

How wonderful to be working with broccoli crowns!  For Meatless Monday, we had a busy day so I needed something quick. I started a pot of water boiling and I made a quick stir-fry sauce with these rough proportions:

  • 1 part cornstarch (I start with 1 tbsp)
  • 2-3 parts soy sauce, tamari, or Braggs liquid aminos
  • 4 parts sesame oil

After a quick shake in a mason jar (I guess I’m still in camping mode) I heated/oiled the wok, tossed buckwheat noodles (available at the Asian market) into the boiling pot of water, and tossed some of the sauce into the wok with some well-drained tofu cubes.  As the tofu started to shrink up, I added a clove of minced garlic, and few grates of ginger.  In went the veggies and a little more sauce as needed. 

After stir frying the kid’s portions, I added Gochujang and brown sugar to the adult’s stir-fry for a little extra sweet & spicy in the adult’s portions.

The buckwheat noodles were drained and the veggies were placed on top. Dinner is served!

After dinner, the trunks of the broccoli crowns were shredded.  I’l pop them in a salad or slaw this week.

How about the strawberries?  This variety is amazing, and we heeded Farmer Jamie’s advice to use them within a few hours of picking. 2 of the three quarts have already been devoured. I haven’t been able to make strawberry hat water with this week’s variety because my kids eat right up to the nub! 

Collard Greens are in the share this week for some of us, too!  If you eat meat, might I suggest grabbing a ham hock from the stand and trying this recipe on for size? 

You’ve been busy as well!  Mira G. made a suggestion for Parmesan Summer Squash Rounds that is Springdellian approved!  File this one away for the future as the squash and zucchini season is going strong!
