The “Tell” – Springdell Spring CSA Pickup #3


Hi everyone, Jess here checking in with the third Spring CSA pickup of the 2019 season! These nutrient-packed green goodies have been a welcome sight given the high-energy week. Let’s see how we enjoyed these in the Anderson household:

  • Asparagus
    • Asparagus tacos with black beans and Springdell Ground Beef
    • Asparagus and Spinach Pesto (for pasta, and on toast with poached eggs)
  • Popeye Spinach

    • In strawberry smoothies (with the last deep-frozen bag of last year’s strawberries)
  • Leaf Lettuce

    • On sandwiches for lunch
This lovely asparagus and spinach pesto was used in several meals this week! Thanks to my former counterpart Sarah Buck for the idea! Spring garlic and the Copp Family Farm Lemon Salt made for a nice adaptation of Sarah’s original recipe.
The pesto was great tossed with pappardelle!
My favorite pesto combo this week was pesto on toast with a poached egg and freshly ground pepper. Yum yum yum!
Taco Thursday was made much more delicious with the addition of asparagus! Springdell ground beef(1 pound) with cumin (1 tsp) and chili powder (1tbsp) was tossed on a bed of spinach and lettuce, summer salsa, and the grilled asparagus! The big orange dob is a habanero puree that knocks my socks off every now and again. I was pleasantly surprised by this delicious combo of flavors!

I’ll be checking back with the 4th pickup of the spring season shortly, meanwhile (shameless plug) I’ll be running around prepping for the 44th annual Strawberry Festival on June 15th, which if you happen to attend, please say hi! I’ll be the one with the clipboard and two braids running around making sure the cream is being whipped, the berries are being hulled, and the patrons are satisfied! See you at the farmstand!
