The “Show” – Springdell Summer CSA Pickup #12

Hello everyone, Jess here with another delicious installment of fresh and local fruits and veggies from Springdell Farm. It doesn’t get much better than this!

Many colors in the veggie rainbow, and those colors are shining!!!

Single and Small Shares enjoyed the same in smaller quantities and minus the eggplant.

We are tomato heavy this week. Embrace it! Cook them down into delicious sauces, slice them up onto sandwiches, (I had a killer grilled cheese with brie, pesto, tomatoes and spinach this weekend!) Remember that they are easy to preserve for winter use, order a box from Farmer Jamie today and pick up on the day of your choice! Corn is also at it’s peak, grab some and set aside an hour or two, and you’ll have a winter of deliciousness!
I asked my family tonight if they were “corned out” yet, to which there was a resounding “nope” around the dinner table. The Providence corn that’s in peak season right now is so sweet, and provides the most kernels per ear, making it great for freezing.

I’ll see you back here soon, and on the Facebook Page throughout the week. Meanwhile, happy eating!
