The Springdell Show and Tell – Winter CSA Pickup #7 Part II



Hi everyone, Jess here, freshly home from a southern vacation, and grateful that there is a bit of warm weather that came home with me! It’s a blessing and a curse for the farmers, the early heat both helping and hindering. The baby calves continue to arrive, the farm welcoming the 21st this week, with 20 more on the way! Baby bull calves Hank and Oscar have moved from Gibbet Hill over to Springdell, and we look forward to meeting them when the warmer weather really moves in.

You can’t beat the intensely smokey flavor of this real deal cheese, and the sauce is fabulous on pork and other meats!
Farmer Jamie is busy prepping the greenhouses for the little seedlings that will become our Summer CSA! Here’s a quick reminder to sign up for yours today if you haven’t already, your summer self will thank you!

My first dinner out of the starting gate was an Orange Flavored Tofu with Bok Choy and brown rice noodles. This flexible recipe is a family favorite when the bok choy and oranges arrive in the share box at the same time. You also don’t have to use tofu as your protein if it’s not your thing, chicken or pork would be good too! Orange Hoisin Glazed Salmon, anyone?
The Vietnamese Caramelized Pork Bowl recipe shared by a fellow Springdellian was scrumptious as well! I skipped the veggies that I didn’t have on hand and tossed some bok choy in the pan quickly. Served on a bed of egg noodles, it was simple and delicious.
