The Springdell Show and Tell – Winter CSA Pickup #10 (Group B)


Hi everyone, Jess here with the latest pickup from Springdell, which includes an optional helping of beef suet! If you picked some suet up with your CSA, I strongly encourage you to check out last week’s post by clicking here! It includes all kinds of information on beef suet & tallow, including what tallow is, the benefits of tallow, how to make it, and what to make with it. Many of our fellow Springdellians have been busy this week making candles, biscuits, pie crusts, bird feed and soap with their tallow! Keep the photos coming, it is inspirational for us all!

Last night, I made my tallow in the dutch oven for the first time (I usually use the slow cooker). I let it cool some and then poured it into wax paper lined trays. This morning it was nice and solid and I broke it into chunks and popped in a mason jar for easier handling.
I’m looking forward to baking, roasting, frying, and generally enjoying this tallow in the months to come.

Farmer Jamie knows it’s a tough time for folks, and is not only helping us grown-ups to get healthy food on the table, but also giving the kids something to do! There’s a whole Agri-Science lesson awaiting our little ones, we look forward to reporting back on how it’s going in the Anderson Household.
It was wonderful to see Gerry’s smiling face and delectable greens at the farm stand on Saturday.
Danny from Jordan Brothers was also working hard to supply us all with fresh seafood. (Please remember that you can pre-order your seafood the week before for your Saturday 10-2pm pickup!)
I just took my first crack at beef tallow fries. These are the real deal. The photo wasn’t great as I had to snap it quickly before these got devoured, they are unbelievably delicious. Comfort food all the way!
