BLT Salad and Watermelon Lemonade


I am milking every last bit of summer out of this weekend.  The days are still warm but the nights are cooling off.  I love sleeping with the windows open snuggled under a blanket.  BUT, My food still looks like summer.  I am keeping the food light and topping it off with a tasty refresher.  Check out my twist on a BLT salad:

I started with the standard BLT, crispy lettuce from the super greens share topped with cherry tomatoes and bacon.  Then I threw on fresh mozzerella chunks and hard boiled eggs from my egg share.  Shake on a bit on honey mustard dressing and you are good to go.  But wait…. on to the watermelon Lemondae!

You gotta start somewhere…6 cups of water

3/4 cup of lemon juice

1/2 cup of sugar

Enter the summer favorite…watermelon!

Remove the pulp and the seeds, leaving you with the sweet pink watermelon juice, you need about a cup.

Add the watermelon juice and stir for a good 2 minutes to dissolve the sugar. Taste test and adjust as needed.

Why not make it a bit fancy, send summer out with a bang. I decided to sugar the rim of the glass with coconut sugar!
