Cinnamon Zucchini Waffles

Every once in a while you need to break out the waffle machine!  Why not make breakfast for dinner with some zucchini snuck in there too.  My boys aren’t big into zucchini, and even thought there are “green spots” in the waffles, my boys gobbled them up!

So let’s get this going!

In a large bowl mix the following

  • 3 cups of flour (gluten free in my house)
  • 1 teaspoon on cinnamon
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda

  • 2 teaspoons of vanilla extract
  • a small 1/4 cup of brown sugar

  • 4 Springdell eggs

  • 1/2 a cup of applesauce
  • 2 cups of milk

Now take 1 zucchini (the eggs snuck into this picture too,) and shred on a box grater.  I like to place a plate on the counter and cover it with a clean dish towel.

This way when I’m ready to squeeze the liquid out of the zucchini shreds all I need to do is gather the edges of the towel and squeeze over the sink.  You will need to give the zucchini a good squeeze, if you don’t there will be too much liquid in the batter and your waffles won’t cook correctly.

Add the zucchini to the batter and mix well while your waffle maker is heating up.

This is a fun breakfast for dinner, or lunch, or a lazy weekend.  Enjoy!
