Maple Overnight Oats


Do you have an early flight to a warm tropical island?  I’m dreaming I know, it’s more likely you have an early meeting or just a busy day ahead.  Either way this is a great way to get you out of the house with a healthy and filling breakfast.

This is an overnight oatmeal that you prep the night before and enjoy with no fuss at all in the morning.  It is very versatile for all tastes and can be a great way to add something healthy to your diet.

Start with two mason jars (12oz size) with covers.  This recipe can easily be doubled or tripled depending how many you are feeding.  The serving size here is two good sized breakfasts.

In a bowl place 1 cup of regular rolled oats, NOT the quick cooking type.

Add 1/2 to 3/4 cup of greek yogurt.  I used plain but you could use vanilla as well.  Add 4 teaspoons of ground flax seeds (you could also use chia seeds here).

You guessed it, use 4 teaspoons (or more if you’d like) of Ben’s maple syrup from your share.

Add 2 teaspoons of cinnamon and mix it all together.

Divide the oat mixture evenly into your two mason jars.

Into one jar I added 3/4 of a cup of milk from the share, into the other I added 3/4 cup of flax milk, my husband uses the flax milk.  You could also use a soy milk or an almond milk, or even cashew milk or coconut milk!

Into one went 1/2 cup of blueberries and the other 1/2 cup of apples.  Be creative here, use any fruit you’d like.  Give it a good stir, screw the lid onto the jar and pop it into the fridge to sit overnight.

In the morning just grab the sealed jar and a spoon and you have an amazing, healthy breakfast on the go. Enjoy!
