Mexican Spiced Slaw


I started wondering how many slaw recipies I have posted over the last two years…a lot.  Why?  The answer is simple, the flavor combinations for slaw seem endless.  I came up with this one because I was remembering a fish taco I had in California with a crispy Mexican spiced slaw on top.  So, I will look back fondly upon my CA trip and that delicious taco as I write out this post for all of you.

Gather the following ingredients for the slaw:

half a head of red or green cabbage, cored and shredded
1 cucumber thinly sliced
1 sweet bell pepper, color of your choice, I used yellow
1/2 bunch of scallions sliced
Gather the following ingredients for the dressing:
2 Tablespoon of olive oil
1 Tablespoon of local honey
The juice of 2 limes, about 1/4 cup
1 tsp cumin
1/2 tsp coriander
1/2 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp pepper

**Just a quick tip here, slaw will soften and taste better if you let it sit for a while.  This is almost always true.  With this one, let it sit at least 45 minutes if you can.

Start by preparing the dressing, this is a honey lime dressing with Mexican spices, great for a taco night!

In a measuring cup pour in the olive oil and local honey.

Add to the measuring cup the juice of two limes.

Add all of the spices and whisk to combine.  Taste the dressing and adjust to your flavor preferences.  You can always spice this up a bit more, but for feeding four boys at Sunday Night Dinner, we kept it mild.

Slice up the half a head of cabbage and the bunch of scallions.

Add the thinly sliced cucumbers and the diced sweet bell peppers to the bowl.

Pour the dressig on and combine.  Again, let this sit for a while so the flavors start to meld together.

A Sunday night dinner is always fun when you get to build your own meal, especially surrounded by family at the holidays.  G’night all, enjoy!
