More With Beets!

I roasted a big bunch of beets and still had a few leftover and wanted to share a few beet tips for you guys.  You never know what to do with a spare beet or two so take a look at these.

Of course my go to is a smoothie, you know how much I love my smoothies.  Today was a strawberry banana and beet smoothie.

A handful of ice, about a cup of strawberries, one banana and 1 cups of milk.  Don’t forget to pop in the beet!

The beet adds a slight sweetness and awesome color!  The kids were hesitant about the beet in there but really loved this smoothie, as did I.

One more beet left to use so I made some beet hummus.  If you need a different appetizer for company coming, a pop of color on a veggie platter etc.  this one works.

Start with a tub of store bought hummus, or better yet if you have time, whip up some homemade!  Empty it into a food processor with one beet.  Only a single beet is used here.

The color on this hummus is amazing.  We spread it on crackers and topped it with a tiny bit of dill.  So so good, fast and impressive.  Enjoy!
