Pineapple BBQ Pork Chops

I picked up my meat share this week.  I’m always so excited for fresh, local meat.  Tonight I thawed two packages of pork chops for dinner, a sweet BBQ pork dish in the crockpot.

Start with one can of pineapple chunks, Juice included. You can also used crushed pineapple if you prefer.

To that add 1 cup of BBQ sauce.  I had sweet baby rays on hand tonight, I Iike to use this sauce because I can count on it being gluten free for my son.

Add 2 teaspoons of garlic powder and 1/4 teaspoon of cayenne powder.  You can add more spice if you would like a sweet and spicy pork chop.

Stir well to combine.

Add your chops to the crock pot.  I used four chops for this.  Be sure that the chops are totally covered with sauce.

Into the crock pot for 4 1/2 to 5 1/2 hours on low, or until the pork is so tender that it falls off of the bone.

I served this over rice with a nice side salad.  It was so good and the boys loved the pineapple.  No leftovers for tomorrow, it was too much of a hit.  Enjoy!
