Zucchini Bars


This recipe has been kindly shared by fellow Springdellian Mira G., and I having tried it I can say that it’s delicious! I literally had to hide these from my other half before the entire lot was devoured. Check it out!

The bars by themselves contain shredded coconut, adding a wonderful flavor. You take this wonderful flavor, and add a cinnamon glaze that takes it over the top!

The final product is cut into small squares, so you can take your time and savor these one succulent square at a time.

Ingredients- 

For the bars-

  • 3/4 cup butter/margarine
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 3/4 cup flour
  • 1 1/2 tsp baking powder
  • 2 cups shredded zucchini (about 3 regular sized)
  • 1 cup shredded coconut 
  • 3/4 cup finely chopped walnuts

For the cinnamon glaze-

  • 1 cup confectioner’s sugar
  • 2 1/2 tablespoons milk
  • 1 1/2 tablespoons melted butter/margarine
  • 1 teaspoon vanilla
  • 1/2 tsp cinnamon

Directions- 

Cream butter in a large bowl.  Beat in sugars gradually. 

Add eggs one at a time.  Beat in vanilla, stir in flour and baking powder. Stir in zucchini, coconut and walnuts.  

Spread evenly in a well-greased 15x10x1 1/2 pan.  

Bake 40 minutes.  Cool and make the glaze (in a small bowl beat glaze ingredients until smooth.)

Spread over the warm baked layer.  Cut into 1 1/2 inch squares.
