Sunday Night Dinner- Double Cheese Burgers and Potato Salad 1


Our usual Sunday night dinner started a bit early tonight.  It was such a nice day we started with some bike riding for the kids, broke out the grill for the season with our dinner and then celebrated the two dads in our clan, both have April birthdays.  Now as I sit here typing, the boys are sleeping soundly, the dishes are clean and I’m reflecting on the day with a smile.

Our Springdell share pick up yesterday gave me so many options for dinner but the idea of breaking out the grill led me to the double cheese burgers.  I took the ground beef and seasoned it with salt, pepper, Cajun spice and mixed in a big handful of shredded mozzarella cheese.

Put those on the grill and it smells like summer already.  I topped them with a sharp cheddar in the last few minutes on the grill and there you have a double cheese burger.

The only thing that would make this burger better is some fixings….oh wait, my Springdell share gave me exactly that…..

Juicy tomato, alphalpha sprouts, horseradish mayo, Springdell farm fresh crispy bacon, mixed greens salad, and parsley potato salad (with sweet potatoes too!).  Awesome fresh local food.

I mentioned it was a bit of a birthday celebration too…..

imageWe ended the meal with banana bread topped with spiced whipped cream and my homemade salted caramel sauce.  Happy Birthday to the dads!

    I seriously could not stop eating tonight. Everything was so delicious. I wanted to take a swim in homemade rosemary horseradish mayo and relax in a jacuzzi filled with that homemade salted caramel sauce. Not to mention great company.
