Pork and Cabbage Stew


Some weeks it’s hard to show you all of the meals we prepare in depth, that’s what makes the honorable mentions a great place for us to give you quick peeks into our kitchens.  This stew was in the honorable mentions this week but ended up to be worth more than just a quick peek.  So, here it is in depth for you.  This made my house smell delicious!

In the bottom of my crock pot I placed a layer of peeled and sliced carrots, about 5 carrots.

On top of that went a layer of potatoes, peeled and chopped.  I think I used three of my big potatoes for this.

I used a lemon pepper spice mix but added a bit of salt and some fresh lemon zest to the party for just a bit of freshness and extra kick.  Make enough to coat your pork pieces.  My pork was about two pounds and my spice mix was about half a cup.  Toss the cubed pork into the spice mix.

Layer that on top of the potaotes.  Next, mince 2-3 cloves of garlic and sprinkle that on top of the well seasoned pork.

Cabbage is up next.  I took a full head of green cabbage and removed the tough core.  I quartered the head of cabbage and placed the slices on top of the pork.

I spread about a cup of my homemade tomato sauce onto the cabbage wedges.

It seems like a lot of steps to this one but the depth of flavor is pretty great.  It’s worth the time, and with the time spent up front you have nothing to do but serve come dinner time.

I let this cook on low for 8-10 hours.  Upon my arrival home I was greeted with the smells of a home cooked meal.  This is great served with crusty bread, we used gluten free french bread here at my house.

There it is, finished product.  Pretty good eats.  One thing to mention.  When I was eating this at dinner I thought it would also be pretty tasty to toss the pork with pesto from my freezer.  It sounded so good I wouldn’t be surprised if you see a post or two using pesto coming from me soon!
