The “Show” – Springdell Winter CSA Pickup #3


Hello everyone!  Jess here with the 3rd pickup of the Springdell Winter CSA!  In a time where many of us are out and about shopping for the holidays, it’s nice to come home with some fresh comfort food in the making.  Let’s take a look!

Today I also picked up the meat subscription too, complete with beef and lamb offerings. Lots of dishes are waiting to be enjoyed here!

 

I’m looking forward to having some fun with the egg nog this week, that is, if there’s any left by the time I get around to it.  My youngest is really enjoying it as-is.  

I tried some with a little dash of spiced rum and nutmeg as I cooked up tonight’s dinner.

After seeing the size of the leaves from the head of lettuce, I decided they would make a great wrap of some sort. I thawed out some peach tomatillo salsa, ground beef and corn.  The ground beef was cooked up with chili powder and cumin (and if the kids weren’t fussy about it, I would have added some onion as well.) Those lovely saladette tomatoes were chopped up, and some brown rice, cheese and and black beans also made an appearance on the dinner table. 

Put it all together with some spicy microgreens on top, and you have yourself a delicious wrap! I was nervous about whether my kids would enjoy this dinner as there was no tortilla or nacho involved. My concerns were alleviated when my other half called the kids to the table for “Lacos”, apparently our new family name for “lettuce tacos”. The name alone was enough to interest the kids and they came to the table for some Laco-building fun. Folks, we have a winner for dinner!
