The “Tell” – Springdell Winter CSA Pickup #6


Hi everyone, Jess here with the 6th Winter CSA  pickup of the season! We got some goodies rolling in, let’s see what’s happening!  

How are you enjoying the coffee this week?  Did you go for the whole or the ground beans?  

I had fun with the pan seared Jordan Brother’s scallops on day one of the CSA pickup.  Wilted Spinach and sweet potato and apple mash joined the party.  I love quick, simple and fresh!

Some of the seared scallops went on top of sweet potato rounds, and those rounds went on top of an apple sprout salad.  

I halved the white sugar in the recipe as I was using Macintosh instead of the more tart Granny Smiths. I used an extra apple and about 1/4 cup lemon juice/water in lieu of the orange juice. (Using 3 apples instead of two seemed to make enough liquid to compensate for the extra cup or so of juice). I also only used one of the two pie crusts called for in the recipe. It came out not overly sweet, you could really taste the sweetness from the apples and sweet potatoes rather than added sugar. The sweet-tooth factor could be a adjusted accordingly by adding whipped cream.

Okay, I  don’t usually post pics of my kids on the web, but this one of my youngest jamming alfalfa sprouts into his mouth was pretty priceless.  He loves these things!

I grabbed a few shiitakes from Farmer Elizabeth at Fat Moon to make a creamy gravy.

The shiitakes were joined by some sautéed onion, and a little beef bone broth also went in the pan with the cube steak drippings…  I am in love with this hearty combo.  

A bounty of local goodness!

Here’s a pic from the other end of the table.  Simple roasted chive herb butter potatoes and an apple sprout salad with pecans made for a tasty addition to the cube steak dinner.  Don’t forget the roasted sweet potato rounds!

One night I did pan seared pork chops with a simple apple pan sauce, and some blanched rainbow carrots. Another simple and fast weeknight meal! 

Taco Tuesday is always fun on CSA pickup week.  This week’s taco featured spinach, sprouts, tomatoes, Springdell ground beef and some summer Tomatillo Salsa Verde.

I really had no plan for dinner tonight, so I went spelunking in the pantry and freezer for some summer tomatoes and peppers. Along with the garlic and onion, it was a party with the thawed Springdell sausages!  The kids enjoyed the sweet sausages while my other half and I went for the hot Italian sausages.  

Had I not had picky eaters, I would have mixed the sausage right in with the veggies, but this made for a pretty presentation, too!

Fellow Springdellian Alissa W. shared some of her meal plans for the week. She baked up this yummy Gingerbread Pudding Cake (from King Arthur Flour) and topped it with apple slices and a dollop of Tully whipped cream. She’ll be checking in with the outcome of this one pot dinner she was planning as well, can’t wait to hear how it is!  Thanks for sharing, Alissa!
