The “Show” – Springdell Spring CSA Pickup #2


Hi everyone, Jess here ready to share the goodies from the 2nd Springdell CSA box of the spring season!

Another week of yummy spring greenery! There are so many things that can be done with the asparagus, click on the asparagus link for more ideas, but here are a few of my favorites below!

This is one of my favorite creations from 2017, behold the asparagus and potato “cake”  with a spinach dip frosting – a stunning and versatile spring side dish!
Fellow Springdellian Dawn DeMeo turned me onto this asparagus tart a few years back. I’ve since made several but none look quite as beautiful as Dawn’s! (Photo by Dawn DeMeo)

This spring soup adapted from a Fine Cooking recipe is still a fave. The trick is that the stock is made more flavorful by using the tougher stalks of the asparagus that are usually composted. It’s one of the heartiest and most flavorful vegetarian soups I’ve ever made.
There’s lots going on this week at Springdell! Seedlings are for sale at the stand (Memorial Day is close, time to plant those gardens!) Jordan Brothers will be by selling seafood on Wednesday from 2-6pm. Finally, it’s the Annual Sheep Shearing at the farm on Saturday! Come watch Kevin Ford work his magic getting the sheep trimmed up and comfortable the old fashioned way, hand shearing! It’s an art that’s all but lost, and too bad too, as this method of shearing is like a day at the spa for the sheep. Lots of other fun family activities as well. Hope to see you there!
