The “Show and Tell” – Springdell Summer CSA Pickup #16


Hi everyone, Jess here! I hope you are well! It looks like the cool weather is settling in, and I’m starting to go into chipmunk mode here at the Anderson household. Many of our fruits and veggies are being prepped for the winter, lots of sauces, jellies, and hardened squashes going into cold storage. Let’s check out this week’s goodies!

The fall veggies have arrived! Lots of round goodies with tougher skins and longer shelf life… Don’t let the quantity scare you, many of these items will store for a while under the right conditions!

Mega Shares also have Red Kuri Squash, Acorn Squash, Jingle Bell Peppers, Concord Grapes, Carrots and Bell Peppers. Small Shares had Watermelon, Potatoes, Yellow Onions, Poblano Peppers Apples, Squash, Lettuce and Carrots. Single Shares received Butternut Squash, Onion, Poblano Peppers, Potatoes, Watermelons, Lettuce, Carrots and Apples. Quantities vary by share, with the larger shares receiving the larger quantities accordingly.

All other veggie scraps composted unless otherwise noted.

Roasted Beets salad with chunks of Westfield Creamery Blue Cheese over the last of my little one’s garden cabbage. It’s an acquired taste and messy, but I love it.
Another ugly but delicious meal- This was a quick adaptation of Kimchi Hash, an awesome recipe brought to my attention by Fellow Springdellian Melissa M. My version here was made with mashed potatoes instead of the cubes and quite delish! Don’t want to make your own kimchi? Pick some up from the farm stand!
This was my oldest’s dinner of the week- a biscuit dough hot dog and sausage pizza from a kid’s cooking book. Not the healthiest dinner, but at least we got a few farm peppers, apples, cheese and tomato sauce in there!
Pumpkin Pie is an Anderson Family staple this time of year, so yummy and delicious! (Not to mention versatile with other squashes!)
Spaghetti Squash Pad Thai is usually what I end up hoarding my spaghetti squash for, but click on the Spaghetti Squash link for other ideas!

Fellow Springdellian Mira G. shared a wonderful sounding recipe this week for Spaghetti Squash Pasta Puttanesca from “The Vegan Instant Pot Cookbook”. Here is a similar version (uses anchovy paste) on Epicurious if you’re looking for something new to try! Thanks for the idea, Mira!

Finally, this one was from the farm stand and not the CSA box, but I found a pretty yummy use for the Copp Family Farm Lemon Salt! If you like a limey and legit margarita, the large grains of this flavorful salt stand up to the task! I even used a little honey around the rim of the glass to keep those giant grains in place with a little sweet kick. Only one of these a bevies a night if you know what’s good for you, these are something special.
