Beets with Roasted Garlic Dressing

I know that the most common combination for sauce to pair with beets is a balsamic glaze.  I know why too, because it’s absolutely delicious.  It’s my go-to combo as well.  I was in the mood to change things up today, and it was totally worth it.  With just a few simple ingredients that you probably already have in your fridge you can make this amazing creamy garlic dressing.  So go gather the following:

  • 1 cup Mayo
  • 1/2 cup of roasted garlic
  • 2 Tablespoons of freshly squeezed lemon juice
  • 4 Tablespoons of heavy cream
  • 1/2 teaspoon of salt 
  • 1 teaspoon of black pepper

I roasted all of my beets yesterday and while I was roasting I added some heads of garlic I had on hand.  Just a typical garlic roast, cut off the top of the garlic, drizzle with olive oil, wrap in foil and there you go.

It produces and amazing rich deep flavor in your garlic.  It is much milder, almost sweet.  It will squeeze right out of the papery outside, which you then discard.

Start by adding your mayo to the food processor.

Add your roasted garlic and let it buzz away, you want this really creamy.

Add your heavy cream and lemon juice…

Season with salt and pepper, be sure to try the dressing to make sure the seasoning is to your liking and adjust if necessary.

I like to put my dressings into a squeeze bottle, it’s much easier to add to a salad, or slather all over some yummy roasted beets like I did.
