Tomato Basil Salad Dressing


The boys and I were so excited to do the pick your own cherry tomatoes this week!  I loved a sauce I made last week with these sun gold tomatoes and I’m always into getting the boys out with nature.  We started at the farm stand to grab our boxes for picking.

Then into the fields we went.

Farmer Jamie opened up two rows for pick your own and they were loaded with beautiful tomatoes.

The boys had a blast and it was really quick picking.  The boys were having so much fun, and so was I.

In about 15 minutes we had this:

Can’t beat it.  Home we went to make more sauce and to try out a new salad dressing using these beauties! Start with one box of tomatoes, 2 cloves of garlic, 1  Tablespoon of fresh lemon juice, salt, and pepper in the vitamin or blender.

Give it a quick purée.

Then add your fresh basil leaves.image

Take the final mixture and press it through a fine mesh strainer to remove the solids.

Back into the vitamin and as the machine is running stream in 1/4 cup of salad oil.

Adjust the seasoning and carefully pour into a salad dressing container.  Because of the basil and sun gold tomatoes, this dressing came out a very vibrant lime green color, so cool!  Drizzle it over some Springdell goodies, enjoy!
