Watermelon Cocktails

Today I wanted to show you a few watermelon drinks.  My simple and go to is using my infuser with just water and 5-6 watermelon chunks.  That’s it.  It makes drinking water so easy when it tastes like summer sweetness.

I had to come up with what to do with the watermelons because my boys wouldn’t eat it.  I couldn’t even believe it but they couldn’t get past the seeds.  There are so many options for using watermelon juice in cocktails or mocktails.  So how do you get to this watermelon juice?  Here’s what I did.  I removed all of the green rind and put chunks of watermelon into my vitamin (or any food processor) and did a very quick 3-4 pulses, just to break down the fruit.

It went in there seeds and all, and you don’t want the pulp in your drinks so you need to set up a strainer over a container, a measuring cup works great.

Pour the mixture into the sieve and use a spatula to push on the solids to remove all of the juice.

Discard the pulp and seeds and there you have it!

Here’s an idea for a watermelon cocktail which uses basil as well (this is courtesy of my neighbor):

3-5 basil leaves, depending on your preference
1 slice Peeled ginger chunk 
1/2 cup watermelon juice
1/2 oz Simple syrup
2 oz Grey Goose Vodka
1/2 oz Fresh lime juice
Ginger ale

Heres an idea for a watermelon mocktail:

4 cups watermelon juice
3 Tbsp honey
Juice from one lime
3/4 cups water or sparkling water
Few sprigs of mint

So, enjoy those last few days of summer weather outside with a refreshing watermelon beverage.  Enjoy!
