Curried Potatoes and Parsnips

The curry with the potatoes and parsnips adds a spice and sweetness in all the right places for a hearty side. Serve with tzatziki, chutney, and naan (or just gobble it right out of the pan like I did…)

No parsnips? Try it with turnips!


Roasted Tomatoes with Herbed Goat Cheese

This is good with goat cheese, but feel free to try other cheeses depending on what you have access to. This won’t be vegetarian if you use the suggested rendered bacon fat, but it is extra tasty if you do.
