Quick Desserts


It made me chuckle when people were saying the CSA basket this week made them think of lasagna (great idea!), but the first thought in my mind was cannoli.  I do own a bakery so I guess that’s where I always go with food!  So, tonight we had two quick desserts that are sure to please!

Let’s start with the cannoli, as promised above.  Start with your ricotta cheese.  Let’s take a minute to appreciate this, yummy! Fresh ricotta will have liquid in it, you want to strain as much out as you can and add it to a bowl.

Into the bowl goes 3/4 cup of powdered sugar and 2 teaspoons of good vanilla (not imitation).  Mix that all together really well.

I then split mine into two bowls to make two different flavors.  I kept one as is for a vanilla cannoli, and I added peppermint chips to the other bowl.

Cover and refrigerator for 2-3 hours.  When they come out of the fridge a bit more liquid will have come to the surface, strain that out as well.

Place the filling into a pastry bag, or a simple ziplock works great too!  snip a small hole in the bottom.

At this point let’s break and talk about the shell.  You can pick up store-bought shells if you are in a hurry, or you can make your own as well!  Tonight was an in a hurry kind of night.

Place the tip into one side of the shell, squeeze to fill.  Flip the shell and fill the other side.

The top photo is the vanilla and the bottom is the peppermint.  Yay!

The grownups enjoyed a cannoli while the little guys enjoyed a “pudding pop”.

The chocolate milk we get in out shares is totally worth it.  It is thick, creamy and tastes like liquid chocolate pudding.  Why not freeze it?  I pulled out the popsicle molds from summer and filled them with chocolate milk.

That’s it.  So rich it needed nothing else.  The boys went nuts for these!
