Broccoli and Potato Pancakes

Less of a recipe and more of a culinary caper, these veggie pancakes could use a do-over. Perhaps read about it here, and then learn from my mistakes to save the consistency of your pancakes! These are savory, and are well accompanied on a bed of warm spinach and topped with a poached egg.


Loaded Spaghetti Squash Pie

Sarah uses Pancetta in this one, but I’m willing to bet bacon ends would work too! Though a spaghetti squash is called for, I bet acorn or another winter squash would work, too!


Popcorn on the Cob

This is not just plain corn, but dried out “popping corn”. NOTHING is as good as this real-deal popcorn. As we’ve found, drying your popcorn cobs is the key factor in getting it to pop efficiently. Dry them overnight in the oven or in a dry place for a couple of weeks or so. Make sure it’s drying in a truly dry area, or you may get mold.
