Hi everyone, Jess here. I just wanted to squeak this one in before the strawberries went out of season. Massaged kale makes the perfect backdrop for a sweet and tangy vinaigrette.
I took about 4 ounces of jam berries, a tablespoon each of honey, unfiltered cider vinegar, and olive oil. Salt and pepper to taste and you’re ready to puree! This makes enough for a hefty bunch of massaged mix kale.
Toss the vinaigrette with your massaged kale (if you can let it sit overnight in the fridge it’s even better). Next, toss with whatever other mix-ins you’d like! Might I suggest the following:
- diced avocado
- pitted cherries
- sunflower kernels
- and of course, more strawberries!
