These are a spring treasure, a veggie that makes CSA members go “ahh yes, this is why I joined a CSA!”  They are a hidden gem that most folks don’t even know exists until they become a CSA member. 

Garlic Scapes

  • Description-

Garlic bulbs send up a long slender green stem when they begin to grow. The stem has a flower at the end, but before the flower opens the garlic “scape” is removed.  This sends the plants efforts to the bulb of the plant.  Scapes are a treat!

  • Preparation-

Scapes are usually cooked but can be eaten on their own. They have a mild garlic scent and flavor so they are good used as aromatics as well.

  • Storage-

Garlic scapes freeze well, you can chop them and lay the scapes flat on a sheet and freeze them. When they are frozen place them in a plastic bag and use all year long.

Recipes Using Garlic Scapes

Shredded Beef and Rice

Mix and match any veggies in your salads, but fennel adds a great freshness and changes up the flavor profile for a change of pace from your standard salad.


Poached Haddock with Aromatics

This simple poached fish can be making with the fish of your choice (adjusting for cooking times as needed). It’s a great way to use those flavor filled fennel fronds (try saying that five times fast!)


Burgers with Sautéed Arugula and Garlic Scapes

This one is easy and flexible. Simply sauté garlic scapes with arugula in butter. This can top a burger, or be a springy side dish. If you want to enjoy some creamy shiitakes, grab some heavy cream, thyme, and sherry and go to town with that as well!
