Ingredient: Pak Choi

Bok Choy with Sesame Soy Glaze

A quick and simple sauté with an Asian flair featuring ginger, chicken stock, soy, sesame oil and brown sugar. Sneak some shiitake mushrooms in for an extra layer of flavor and heartiness! Like most of my veggie sides, toss it on a bed of rice, slap an egg on top and you have a tasty Meatless Monday Meal!

Bibimbap

Bibimbap is a wonderful way to enjoy CSA ingredients of the season, as it’s very flexible depending on what’s in season. Sizzling rice topped with delicious combinations of meat and veggies, an egg and distinctly flavorful sauce in a stone hot pot (optional but recommended) is really something special. The only two pantry ingredients that you might need are Gochujang (available at Asian Markets or well-stocked supermarkets) and sesame oil, and you’ve got yourself a party!

Quinoa Bowls with Sweet Miso Curry Sauce

A hearty Meatless Monday dish, full of veggies that have known to be unpopular to some. Inspired by fellow blogger Andrea Lucas whom in turn was inspired by the sweet curry sauce at Life Alive in Lowell, this little number packs a delicious punch. This combo has been found to be most enjoyable to even the most discernible palette in the Anderson household. Play with the veggies and we hope you like it, too!
