White Bean and Swiss Chard Soup

I wish I could take credit for this one, but it’s adapted from Gwyneth Paltrow’s clean eating recipe collection called “It’s All Good”. Guess what? She’s right! This buttery rich soup is full of flavor and none of the bad stuff. It’s also a great use for all that slow cooker veggie broth we’ve been making from the veggie scraps!
It’s also a very flexible recipe ingredient-wise. No leeks? No problem! No chard? Just about any other leafy green will do! Canned or prepped dried beans work here. Make this one your own and enjoy!


Chimichurri

Chimichurri is a great sauce or marinade for many meats. It’s a nice alternative to pesto, and though it involves jalapeƱos, it’s very accessible on the spicy scale. This version makes a ton, so get ready to freeze some or pop it on everything you make throughout the week. Either way, it’s great stuff and I hope you think so too!


Lamb Stock

Lamb rib racks are great. They are inexpensive, and make a wonderful stock for other recipes. The stock is not gamey and is a great substitute for beef stock (even preferred to beef stock as it is so flavorful).
