This is a fresh and tasty way to use a bunch of parsley. Enjoy your tabouleh with the traditional bulgur wheat, or with this quinoa twist. Chopped tomatoes, mint, garlic, cucumbers, summer squash, red onion or scallions are some fresh and tasty variations. Best to make a day ahead to allow the flavors to meld.


Bok Choy with Sesame Soy Glaze

A quick and simple sauté with an Asian flair featuring ginger, chicken stock, soy, sesame oil and brown sugar. Sneak some shiitake mushrooms in for an extra layer of flavor and heartiness! Like most of my veggie sides, toss it on a bed of rice, slap an egg on top and you have a tasty Meatless Monday Meal!


Spring Tart or Tartine with Fresh Herbs

Got asparagus? Or arugula? Or spinach? Or any combination of these? This is a very flexible recipe, if you use puff pastry, you’ll make a tart. If you instead broil up a buttered slice of bread and you’ll make a tartine. The rest is simply eggs, and herbs of choice. Use your imagination and enjoy this quick and simple meal option!
