Clover Mint Tea and Cookies

It was all about Clover flowers today in the kitchen.  I knew I was going to try out clover tea and what goes better with tea than cookies!  Let’s get started with the tea.

Add 4 cups of water to a pot, bring it to a simmer.

Add one bag of black tea, I used English Breakfast.  When the water simmers, remove the bag when it reaches a boil.  Now, I tried about 6 different teas and this one was by far the best, take my word for it.

After you remove the tea bag add about a cup of clover flowers only, no leaves or stems for this one.  Also add about 6 large mint leaves, sliced into thick ribbons.  Let this mixture steep for 10 minutes.

Pour the mixture through a fine sieve into a pitcher and add about 3 cups of ice. Did I mention this was iced tea?  While that comes down in temp lets get the cookies started.

I used about 1/4 cup of clover flowers, separating the flower tops.

Make your favorite shortbread cookie dough adding the clover flowers and about 1/4 cup of honey.

I placed the dough into a bag a smoothed it out for you to see how pretty the flowers were in the dough.  Into the fridge to chill for two hours it went!

These came out beautiful!  A nice smooth cookie with pretty purple flecks of clover running throughout.  They tasted sweet from the honey and a bit like earthy springtime!

To finish off the iced tea I decided to rim the glass with a fresh mint sugar.

In a food processor add 3/4 cup of white sugar,

1/2 cup of mint leaves from the pick your own herb garden,

let it go for a bit and you have a fragrant and beautiful mint sugar.  This can be sprinkled on fresh fruit also!
