Crostini with Radish and Pesto

Today was a busy day for the Anderson family!  After a morning of a birthday party, a meeting to plan the Strawberry Festival, and running the Westford Family Fun Run, we were ready to settle down with friends for some yummy Farm-to-table dinner.  Given the busy day, I went with a slow cooker pulled chicken breast a la Springdell.  I didn’t really have time to measure the sauce this morning, so I tossed in my chicken breasts, some BBQ sauce, and a few ingredients that roughly resembled the sauce from my favorite pork ribs recipe.  Some Springdell Summer CSA corn was thawed from the freezer, and a few of those lovely winter CSA potatoes went into some garlic mashed potatoes.

But the debut of the evening was all about the radishes!  Radishes are a hard sell in my household, the family overall finds them too peppery for their taste.  I usually honey roast them to make the flavor a little milder.  Today, with inspiration from a Real Simple recipe, I’m branching out and slicing them raw!

I cut up about 12 pieces of a baguette thinly (about 1/4 inch or so) and at the diagonal.  Each piece was brushed with a bit of olive oil and cooked on a baking sheet at 400 degrees, five minutes per side.

On went some pesto (I thawed some of my recently made cilantro pesto) and thinly sliced radish.   A sprinkling of coarse sea salt was suggested in the original recipe, which I omitted.

These were a total hit. We were all simply blown away by how scrumptious these were!  The crispy and warm baguette was softened in all the right places by the pesto.  The peppery bite of the radish which is usually at the forefront was not as potent as the flavor and crunch. Everyone at the dinner table, including radish skeptics, went back for a second and third crostini.  My husband, who is admittedly not a fan of radish OR cilantro, also went back for more.  It was a reminder to all of us that some foods just need the right neighbor to shine. If there’s a veggie you don’t like, do give it a second chance in a different dish, as you may be missing out on something fabulous!
