Taco Salad and Frozen Yogurt Drops


Tonight was one of those nights where we needed a dinner that can be put together quickly.  We had a valentine’s day party, a play date and before you know it, it’s dinner time.  With my family anything with taco seasoning gets devoured.

This is a form of a taco salad, but using what I had for veggies from the share.  Our lettuce had long since been used so I decided to use cabbage as the base of this warm salad.

I started by getting my Springdell ground beef cooking in a pan.

Add a little bit of stock and your favorite taco seasoning, homemade is always best in my opinion.

With that I tossed in a bag of corn I had frozen from the summer crop.

Put that on your lowest setting and let the flavors start to mix together.  While that is going, chop up half a head of green cabbage in a pan with a bit of Amish roll butter and salt.  I cook it just so its warm but still has a bit of crunch to it.

You can add any veggies that you’d like to this.  We also had red peppers, scallion, cucumbers, fontina cheese, salsa and guacamole on the table too.

Lots of Springdell goodness and it was a win.  It’s amazing that my family enjoys cabbage so much!

Dessert tonight is a healthy way to have a treat.  Frozen Yogurt Drops!  It’s very simple, takes almost no time at all and you can feel good knowing you are treating your body to a healthy dessert.

Line a baking sheet with waxed paper, grab a ziplock bag and I used an orange and a grapefruit from the share.

I opened up a container of vanilla greek yogurt, you could also use plain, or any flavor that interests you!  Into the yogurt I added just a pinch of orange zest and about 2 Tablespoons of fresh orange juice (I did the process again with the grapefruit as well).  Give it all a good mix.

Place your ziplock bag into a cup and curl the edges over.  This makes it way easier to fill your baggie with the yogurt, just a tip.

Snip a small hole in the corner of the bag and pipe little dots of yogurt onto the tray.  Freeze for 1 hour, then remove from the wax paper and place in an airtight container.

When you are ready, you have a great snack or dessert treat.  Enjoy!
