  • Description

Limes are a high acid citrus fruit.  They are vibrant green, generally smaller and more acidic than their counterpart, the lemon.  Limes many recipes both sweet and savory.

  • Preparation

 Limes are becoming more popular in the culinary world.  Just as lemons, they are used in food preparation, in cocktails, and in household cleaners as well. Be sure to use the zest of the lime as well as the juice.

  • Storage

Limes are fine to keep on the counter but they will last longer if stored in a plastic bag in the refrigerator.  TIP- roll your citrus fruits on the counter before using, it will give you a higher amount of juice

Chilled Coconut Corn Soup

If you’re looking for a hearty vegan option for your summer corn bounty, this soup has the semblance of a sweet potato or butternut squash chowder, as the corn provides a similar sweetness to the potatoes. Avocado and coconut milk provide some quality fats and nutrition, while ginger adds a nice touch. I skipped the cilantro garnish as it wasn’t in season, but I bet it’s good if you have better luck growing cilantro than me! The toasted coconut garnish is great on it’s own!


Cherry Tomato and Tomatillo Salsa
